1 Tablespoon Extra-Virgin Olive OIl
1 Tablespoon Butter
1 medium to large onion of your choice -sweet, yellow, or white
.75 cup good quality mayonaise
.75 cup sour cream
4 ounces blue cheese
Kosher salt and fresh ground black pepper
Place the oil, butter, and sliced onion in a pan. Heat the pan on a low to medium setting. Cook the onions, stirring occasionally, until the onions are a deep golden brown, about 15 to 20 minutes. Let cool.
Whisk together the mayonaise and sour cream. Crumble the blue cheese into the mixture. Stir in the onions. Season with salt and pepper.
Cover and refrigerate until flavors blend, about 2 hours. Serve chilled or at room temperature.
Dip can be made up to two days in advance.
Would carmelized onion and blue cheese sauce go well with macroni?
It might be good,worth a try. I would add fried onions on top.
